Snap Pea Salad

One of my favorite vegetables of all time, a snap pea. It’s so simply delicious and if you’re able to get them from a local farm, I highly recommend it. They start popping up in June and hit their peak flavor by August. There are few things better in spring or summer produce than a good snap. They’re versatile, great on-the-go snacks, and if you live near a small farm, sometimes you can even go pick your own.
This recipe keeps it simple and fresh—letting the flavor of the snap pea really shine.
Ingredients
3–4 cups snap peas, cleaned
