Little Gems
w new potatoes + tuna
When I don’t know what to eat, I’ll make a salad. Salads take many shapes and forms, and this one’s a classic French-inspired gem salad—a sort of Niçoise, if you will. Little gems are like a cousin to romaine: crunchy, light, and watery with the slightest sweetness—perfect for soaking up that delicious vinaigrette.
I like adding some baby potatoes and a bit of canned tuna for oomph—a little protein and carbs go a long way. I made this after a long run, and it was everything I could’ve wanted. I weirdly don’t get that hungry after runs, but this is kind of the perfect middle ground: still light, but with enough substance to be satisfying and nutritious.
