Barley w Greens + Ricotta
This dish is inspired by one I had at St. John in London last week. One of those Ratatouille moments where everything just works. Your palate is warm and pleased, and you’re hit with this wave of comfort and nostalgia. I haven’t had many dishes like it—kind of risotto-adjacent, but greener, fresher, brighter. I put my own twist on it and loaded it up with all kinds of greens. It’s hearty and healthy and somehow still leaves you wanting more.
